EU leaders arrive in Sofia a day before the EU-Western Balkans summit to meet at an informal dinner at the invitation of Donald Tusk, President of the European Council. The event is hosted by Boyko Borissov, Prime Minister of Bulgaria.
Prepared by Chef Borislav Paunov, the concept of the menu is inspired by local products and traditional ways of cooking. The decoration of the venue and the service is provided by Red Devil Catering.
As a starter Chef Paunov offers a salad composed of Bulgarian vegetables in the colours of the national flag. The dish consists of a pink tomato grown in a bio farm in southern Bulgaria, parsley sauce, cow's cheese from a small dairy in the Balkan Mountains, Snezhanka salad with strained buffalo yoghurt and cucumbers, and a green salad of naturally grown micro-plants.
A variation of meatballs with lutenitsa and fried potatoes is served as the appetizer. Chef Paunov adds a few twists to the traditional dish in the form of raw and dried Boletus mushrooms, three types of lutenitsa and coloured potato chips.
The main dish will be buffalo tenderloin with Bulgarian black and white truffle sauce, ground apple and parsnip puree, served with baby carrots. The meat comes from a farm in the Balkan Mountains.
For dessert, Chef Paunov prepares his interpretation of classic walnut cookies, with a side of rose yoghurt and raspberry and strawberry mousse to give them more freshness and colour and build more layers of flavour.
The guests will be served rye bread with a variation of black rye bread, coloured with charcoal.
